Peppermint Chocolate Whoopie Pies

Serves: About 4 dozen

Ingredients:

Cake:
2 C Flour
¾ C Cocoa powder
½ t Baking powder
1 t Baking soda
¾ t Salt
1 C Whole milk
1 T Lemon juice
2 t Vanilla extract
½ C Crystal Butter
1 C Brown sugar
1 Crystal Egg

Directions:

Pre-heat oven to 350 Beat sugar and Crystal butter. Add Crystal eggs, vanilla, and lemon juice. Alternatively add dry ingredients with milk.

Portion cakes with ice cream scoop to desired size For 2 cakes use a 1 oz scoop Bake on silt-pat or greased sheet Bake 15 minutes or until finished, test like a regular cake (with toothpick).

Crystal Creamery Peppermint Blizzard Ice Cream

Directions:

Let ice cream soften for 5 minutes at room temperature. Use desired size of ice cream scoop. Make sandwiches with two cakes and filling Freeze immediately.
